Mexican Night

Hop on board and let’s have a Mexican fiesta! This night’s dinner is sure to wow the fussiest eater with its many options. “Make your own taco” night takes a little bit of prep work but is a fun interactive dinner for the whole family.

 


Menu
Appetizer- Cheese Dip and Chips or Black Bean Salsa
Dinner-Make Your Own Tacos
Dessert- Hershey’s Kisses
Peanut Butter Cookies


Cheese Dip and Chips
Ingredients:
• 1 can of Rotel diced tomatoes, not drained.
• 1 package (16 oz) of Velveeta cut into cubes. (This is a great job for little hands. Let your child use a butter knife, supervised, to cut the cheese into chunks.)
Directions:
• Add the two ingredients to a medium saucepan.
• Cook over medium heat until cheese is melted, stirring often.
• Serve warm right away. If this dip cools off just heat it back up in the microwave.
• Serve with tortilla chips or corn chips.


Black Bean Salsa
Ingredients:
• 1 can of black beans, rinsed
• ½ cup of canned corn
• 1 can of Rotel diced tomatoes
• 1 tablespoon lime juice
• ¼ Tablespoon ground cumin
Directions:
Mix all of the ingredients in a bowl.
Cover and refrigerate for 30 minutes. Serve with tortilla chips or corn chips.


Make your Own Tacos
Ingredients:
• Ground beef, turkey or sirloin
• 2-3 Chicken breasts
• Lettuce, cut and placed in a bowl
• 1-2 large tomatoes, cut and placed in a bowl
• 1 pkg. (2 cups) shredded Mexican cheese, placed in a bowl
• Sour cream
• 1 jar of your favorite Salsa
• 2 packets of your favorite taco seasoning mix
• Whole wheat or white soft shell tortillas
• Hard taco shells

Directions:
• Brown the hamburger meat until all pink is gone, drain and add one taco seasoning packet and mix according to directions. Set aside.
• Cook/grill the chicken breasts until cooked throughout, cut into small pieces, drain and add one taco seasoning packet. Mix according to directions. Set aside.
• Set up a buffet with the meats, lettuce, tomatoes, shredded cheese, sour cream and a choice of hard and soft taco shells. Let each person come and make their own hard or soft shell taco with beef or chicken. A taco salad is also a good idea. Just pile your favorite toppings on top of shredded lettuce. You can use salsa poured over top as a dressing or mix the salsa with a little ranch for a tasty twist. You can do the same with tortilla chips as your base to make a large plate of nachos.


Hershey’s Kisses Peanut Butter Cookies
Ingredients:
• 48 Hershey’s kisses
• ½ cup of shortening
• ¾ cup of peanut butter
• 1/3 cup of granulated sugar
• 1/3 cup packed light brown sugar
• 1 egg
• 2 Tablespoons of milk
• 1 teaspoon vanilla extract
• 1 ½ cups of flour
• 1 teaspoon on baking soda
• ½ teaspoon salt

Directions:
• Preheat the oven to 375 degrees.
• Mix the shortening and peanut butter together in a bowl until it is all blended.
• Add the granulated sugar and brown sugar and mix.
• Add egg, milk and vanilla. Mix again.
• Stir in the flour, baking soda and salt.
• Shape the dough into 1-inch balls. Roll in granulated sugar.
• Place on an ungreased cookie sheet.
• Bake 8-10 minutes.
• Take out from oven and press a Hershey’s kiss, unwrapped, on top. The cookie will crack at the edges.
• Cool completely.
This recipe makes 4 dozen cookies and is perfect for allowing your little ones to help.
If you want the same result but don’t have time to do all the mixing, you can take a short cut. Buy the pre-made peanut butter cookies from the refrigerated section of the grocery store. Bake according to directions. Place an unwrapped Hershey’s kiss on top as they come out.
It is the same idea, just less work.

This dinner is sure to be a favorite for all family members. Make lots of chicken and beef as these make great leftovers. This dinner can also be made early in the day and refrigerated for a quick heat up later on.
